Stanley has opened its doors at Manly Wharf, marking the highly anticipated Sydney return of award-winning chef Louis Tikaram and bringing his acclaimed Cantonese cooking to the Northern Beaches.
Set on the harbourfront and drawing inspiration from Hong Kongs seaside Stanley Bay, the 248 seat restaurant spans indoor and outdoor dining, with a dedicated bar and private dining room perfect for private functions, birthdays, and Christmas parties.
The menu brings Stanley’s ethos of great food, friends, fisherman and farmer’s to Sydney, showcasing Australian seafood, premium meat and seasonal produce through the traditions and techniques of Cantonese cooking.
Highlights include Morton Bay bug spring rolls, prawn toast with truffle mayo, lobster and truffle dumplings and Peking duck from Stanley’s custom-built duck oven. Three live seafood tanks at the restaurant’s entrance hold a changing selection, with diners able to choose seafood including coral trout, Southern Rock Lobster and mud crab to be prepared to order.
For Tikaram, the opening marks a return to the city where he spent a decade working in some of Australia’s most respected kitchens, including Longrain, Bentley Restaurant + Bar and Tetsuya’s.
“Opening Stanley in Sydney is incredibly meaningful to me,” says Tikaram. “Sydney shaped me as a chef. I arrived here as a young apprentice and spent ten years learning from some of the best people in the industry.
“It’s also where I first fell in love with the energy of Chinese restaurants. Whether it was breakfast in Chinatown before work or celebrating milestones with family and friends, those experiences have stayed with me throughout my career.
“To return with Stanley, a restaurant that reflects my Chinese heritage, my travels and everything I’ve learned over the years, feels very special.”
To celebrate the opening, Manly and Northern Beaches locals dining at Stanley until the end of September 2026 will receive a complimentary glass of wine or beer with their meal.
